Chutney Vs Relish
Eskimos had 100’s of words for snow. Why do we need more than 1 word to differentiate these fantastic preserves?
Chutney Is :
With chutney the entire product forms one continuous substance, that whilst it may be made up of multiple & seperatable ingredients – these have been cooked for long enough time & in enough liquid, that if you left it in a jar with just the force of gravity, it would fall to the bottom of the jar leaving no air-gaps whatsoever.
Relish is:
Relish is similar to chutney & may even contain identical ingredients, but either the cut of the ingredients, or the amount of liquid, or the duration or intensity of heat of cooking means that once cooked, if the relish was put in a container with just the weight of gravity it would not settle completely to the bottom of the container.
The lack of liquid and /or the consistency of the product would mean that in the absense of a weight air bubbles will form in much of the product
